Sweet Potato & White Bean Hash
It’s everyday food done thoughtfully, simple ingredients coming together to support energy, digestion, and overall wellbeing.
Ingredients:
- 2 sweet potatoes, peeled & diced
- 1½ cups cooked white beans
- 1 small red onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp smoked paprika
- ½ tsp dried rosemary or Italian seasoning
- Salt & cracked black pepper, to taste
- Juice of ½ lemon
- Fresh parsley or basil, chopped
Optional additions
- Baby spinach or kale (1 cup)
- Olives or capers (1 tbsp, chopped)
- Avocado slices or tahini drizzle for serving
Preparation Steps:
- Preheat oven to 200°C / 400°F.
- Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 25–30 minutes, turning once, until golden and tender.
- Heat remaining 1 tbsp olive oil in a large pan over medium heat.
- Sauté onion for 3–4 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add bell pepper, thyme, rosemary, and smoked paprika. Cook for 2–3 minutes.
- Add roasted sweet potatoes and white beans.
- Gently toss and cook for 4–5 minutes until warmed and lightly crisped.
- Turn off heat. Add lemon juice and fresh herbs.
- Adjust salt and pepper to taste.
