Ingredients:
Base
- 1 cup black sesame milk (black sesame + water, strained)
- 2 tbsp tahini
- 1½ tbsp raw cacao powder
- 1 tbsp carob powder
- 2 tbsp soaked & blended dates
- ½ tsp vanilla extract
- Pinch of fine sea salt
Texture & Set
- 1½ tbsp psyllium husk powder (the “soil” texture, not gelatinous)
- 1 tsp arrowroot powder
Mineral Finish
- ¼ tsp food-grade activated charcoal
- Optional: pinch of maca or lucuma
“Soil Crumble” Sprinkle on top:
- 1 tbsp ground walnuts or almonds
- 1 tsp cacao nibs
- ½ tsp coconut sugar
- Tiny pinch of salt
Pulse once or crush by hand.
Preparation Steps:
- In a saucepan over low heat, add black sesame milk, tahini, cacao, carob, date syrup, vanilla, and salt.
- Whisk slowly until smooth and glossy. Do not boil.
Activate texture
- Sprinkle in arrowroot while whisking continuously.
- Remove from heat.
Create the soil
- Whisk in psyllium husk gradually (do not dump it in).
- Stir in activated charcoal if using.
Rest & set
- Pour into shallow bowls or wide cups.
- Let rest at room temperature for 15 minutes, then refrigerate for 30–40 minutes.
Final texture check
- It should be soft-set, spoonable, slightly resistant—like cool earth, not pudding.
Optional: 1 drop of olive oil on top for sheen
