Cherry Linen Sheets

A peelable, translucent cherry dessert you eat with your hands.

Ingredients:

  • 2½ cups fresh cherries, pitted
  • 1½ tbsp maple syrup
  • 1 tsp lemon juice
  • ¾ tsp agar agar powder
  • 2 tbsp water
  • Pinch of sea salt

Optional (but beautiful):

  • 2–3 torn basil or mint leaves
  • Very fine lemon zest

Preparation Steps:

  1. Blend cherries, lemon juice, salt, and maple syrup until silky smooth.
  2. Strain if you want an ultra-refined texture (optional).
  3. In a small pan: Whisk agar with water
  4. Bring to a boil. Simmer 1 minute until fully dissolved
  5. Immediately whisk this into the cherry purée while warm.
  6. Line a flat tray with silicone mat or parchment
  7. Pour cherry mixture and tilt to spread thin (almost like paint)
  8. Sprinkle herbs or zest if using
  9. Let it set at room temperature (10–15 minutes), then refrigerate 30 minutes.
  10. Peel gently from the liner
  11. Cut into long ribbons, squares, or irregular pieces
  12. Layer loosely on a plate like folded fabric. Roll into soft spirals
  13. Stack with fresh cherry halves between sheets
  14. Finish with: A drop of olive oil or Crushed pistachio
