Raspberry Pistachio Frozen Yogurt Bark
This Raspberry Pistachio Frozen Yogurt Bark is creamy, refreshing, naturally beautiful, and made with just a handful of wholesome ingredients. It’s vegan, gluten-free, and perfect for warm days when you want something light yet satisfying.
Ingredients:
Yogurt Base
- 2 cups vegan Greek-style yogurt (high-protein if available)
- 1 cup fresh raspberries
- 2 tbsp maple syrup (adjust to taste)
- 1 tsp vanilla extract
- Zest of ½ lemon (optional, but brightens the flavour)
Toppings
- ¼ cup chopped pistachios
- ½ cup fresh raspberries
- 2 tbsp freeze-dried raspberries, lightly crushed
- 2 tbsp unsweetened coconut flakes
- 2 tbsp vegan dark chocolate, melted
- Optional: edible dried rose petals or mint leaves for a premium finish
Preparation Steps:
- Make the Raspberry Yogurt: Blend together until smooth and creamy: Yogurt, Fresh raspberries, Maple syrup, Vanilla & Lemon zest
- Line a small tray or loaf tin with baking paper. Spread the raspberry yogurt mixture into an even layer about 1 cm thick.
- Decorate & Scatter over: Fresh raspberries, Pistachios, Coconut flakes, Freeze-dried raspberries
- Drizzle the melted dark chocolate across the top in thin zigzags.
- Finish with a few rose petals or mint leaves if using.
- Freeze for 4–5 hours, or overnight, until completely firm.
- Remove from the freezer and let sit for 2–3 minutes. Break into rustic shards or cut into squares with a warm knife. Serve immediately.
