Ingredients:

Blueberry Filling
- 8 cups fresh blueberries
- ¼ cup sugar
- ¼ cup tapioca flour
- 1 tbsp lemon juice
Almond Oat Crumble
- ¾ cup gluten-free rolled oats
- ½ cup brown or coconut sugar
- ¾ cup almond flour
- ¼ cup sweet rice flour (mochiko)
- ¼ cup tapioca flour
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup sliced almonds
- ½ cup vegan butter, melted
Preparation Steps:
- Preheat oven to 375°F (190°C).
- Mix all dry crumble ingredients (except sliced almonds).
- Add melted vegan butter, mix until crumbly, then stir in almonds.
- Toss blueberries, sugar, tapioca flour, and lemon juice in a baking dish.
- Crumble topping evenly over the blueberries.
- Bake 50–55 minutes, until bubbly and golden.
- Cool slightly, then serve warm.
